Rich Cheesy Hamburger Potato Casserole

A comforting and delicious casserole featuring layers of ground beef, tender potatoes, and creamy cheese, perfect for family dinners.

  • 2 lbs ground beef (lean preferred)
  • 4 large potatoes (peeled and thinly sliced)
  • 1 medium onion (chopped)
  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 1 can (10.5 oz) cream of mushroom soup
  • 1 cup beef broth
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • Salt and pepper (to taste)
  • 1 cup milk
  • 1 cup turkey bacon (chopped)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Brown the beef in a large skillet over medium-high heat until cooked, about 7-10 minutes; drain excess fat.
  3. Sauté the onions in the skillet for 2-3 minutes until translucent.
  4. Combine the cooked beef and onions with the cream of mushroom soup, beef broth, garlic powder, onion powder, milk, and half of the cheddar and mozzarella cheeses.
  5. Layer half of the sliced potatoes in a greased 9×13 inch casserole dish.
  6. Fill with half of the beef mixture, then layer the remaining potatoes and top with the rest of the beef mixture.
  7. Top with the remaining cheddar and mozzarella cheese, and sprinkle chopped turkey bacon on top.
  8. Bake covered with foil for 45 minutes; remove foil and bake for an additional 15-20 minutes until golden and bubbly.
  9. Let sit for 10-15 minutes before serving.

Notes

Feel free to customize the casserole with different cheeses or vegetables. Leftovers are just as good the next day.
