Roasted Cauliflower Green Goddess Salad

A colorful blend of roasted cauliflower, mixed greens, avocado, and a vibrant Green Goddess dressing, perfect for a fresh and satisfying meal.

  • 1 head cauliflower, cut into florets
  • 2 tablespoons olive oil
  • Salt and pepper, to taste
  • 4 cups mixed greens
  • 1 avocado, diced
  • 1/4 cup green onion, chopped
  • 1/4 cup fresh herbs (like parsley, basil, or cilantro)
  • 1/2 cup Green Goddess dressing (store-bought or homemade)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Cut the cauliflower into florets, about 1-2 inches in size.
  3. Toss the cauliflower florets with olive oil, salt, and pepper until coated.
  4. Transfer to a baking sheet lined with parchment paper and roast for 25-30 minutes, flipping halfway through.
  5. In a large bowl, toss the mixed greens, diced avocado, chopped green onions, and fresh herbs.
  6. Add the roasted cauliflower to the salad bowl and drizzle with Green Goddess dressing. Mix gently to combine.
  7. Serve as desired, either plated or straight from the bowl.

Notes

You can substitute cauliflower with broccoli or Brussels sprouts. Customize the salad with your favorite ingredients or dressings!
