Cozy Up with Roasted Cauliflower Soup

A warm and creamy roasted cauliflower soup that brings comfort to any chilly day.

Ingredients

  • 1 large head of cauliflower, cut into florets
  • 1 medium onion, chopped
  • 4 cups vegetable or chicken broth
  • 1 cup heavy cream
  • Salt and pepper to taste
  • A drizzle of olive oil

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Prepare the cauliflower by cutting it into florets and tossing with olive oil, salt, and pepper.
  3. Roast the cauliflower for about 25-30 minutes, flipping halfway through.
  4. Sauté the onions in a large pot with olive oil for 5-7 minutes until soft.
  5. Combine the roasted cauliflower with the sautéed onions, pour in the broth, and simmer for 10-15 minutes.
  6. Blend the soup until smooth, adding heavy cream during this step.
  7. Final adjustments can be made with broth or water for thickness.
  8. Serve in bowls, garnished with olive oil or herbs.

Notes

For a spicy kick, add chili powder or red pepper flakes. To make it vegan, substitute heavy cream with coconut milk.
