Refreshing Rosemary Peach Mocktail

A vibrant mocktail that combines sweet peaches with aromatic rosemary, perfect for summer sipping.

Ingredients

  • 2 ripe peaches
  • 2 sprigs rosemary
  • 1 cup water
  • 1 cup granulated sugar
  • 2 lime wedges
  • 2 ounces peach nectar
  • Coarse sugar (optional)
  • 6 ounces sparkling water
  • Sprig of rosemary (for garnish)
  • Slice of peach (for garnish)

Instructions

  1. Make the Rosemary Peach Syrup: In a small saucepan, combine the 1 cup of water and 1 cup of granulated sugar. Toss in the 2 sprigs of rosemary. Turn the heat to medium-high and stir until the sugar completely dissolves. Let this simmer for about 5 to 7 minutes.
  2. Prepare the Peaches: While your syrup is cooling, chop up your 2 ripe peaches into small chunks and place them in a bowl.
  3. Combine It All: Once your syrup has cooled down, strain out the rosemary and pour the syrup into a pitcher. Add in your chopped peaches and 2 ounces of peach nectar. Gently mash the peaches.
  4. Mix & Chill: Squeeze in the juice from your 2 lime wedges, stir everything well, then refrigerate for at least 30 minutes.
  5. Rim Your Glasses: Moisten the rim of your glasses with a lime wedge and dip in coarse sugar (optional).
  6. Assemble Your Mocktail: Fill each glass halfway with the rosemary peach mixture, add ice cubes, and top with 6 ounces of sparkling water.
  7. Garnish & Enjoy: Add a sprig of rosemary and a slice of peach for garnish. Serve and enjoy!

Notes

You can substitute peaches with nectarines or canned peaches if not in season. For a slushy version, blend with ice.
