S’mores Cookie Bars

  • 1 cup Unsalted Butter, softened
  • 1 cup Brown Sugar, packed
  • 1/2 cup Granulated Sugar
  • 2 Large Eggs
  • 1 teaspoon Vanilla Extract
  • 2 1/2 cups All-Purpose Flour
  • 1 teaspoon Baking Soda
  • 1/2 teaspoon Salt
  • 1 cup Graham Cracker Crumbs
  • 1 cup Chocolate Chips
  • 1 cup Mini Marshmallows
  • Extra Chocolate Chips and Marshmallows for Topping

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Line a 9×13 baking dish with parchment paper, letting the extra hang over the sides.
  3. Beat together the softened butter, brown sugar, and granulated sugar until fluffy and light, about 2-3 minutes.
  4. Add the eggs, one at a time, followed by the vanilla extract.
  5. Whisk together the all-purpose flour, baking soda, and salt in a separate bowl.
  6. Gradually add the flour mixture into your butter mixture and mix just until combined.
  7. Fold in the graham cracker crumbs.
  8. Add the chocolate chips and mini marshmallows, folding gently to distribute.
  9. Pour the cookie dough into the prepared baking dish, smoothing into an even layer.
  10. Top with extra chocolate chips and mini marshmallows.
  11. Bake for about 25-30 minutes, until edges are golden brown.
  12. Cool in the pan for at least 15 minutes before lifting out and slicing into bars.
