  • 4 large apples, peeled and diced (775 grams)
  • 1/4 cup salted butter, cubed (for apple filling)
  • 2 tbsp apple cider (or 1 tsp of lemon juice)
  • 1/2 cup brown sugar, packed (for apples)
  • 1 and 1/2 tsp cinnamon (for apples)
  • 1/2 tsp nutmeg (for apples)
  • 1/4 tsp ground cloves (for apples)
  • 1 cup granulated sugar (for caramel)
  • 6 tbsp salted butter, cubed (for caramel)
  • 1/2 cup + 1 tbsp heavy cream
  • Pinch of flaky sea salt
  • 1/2 cup granulated sugar (for topping)
  • 2 and 3/4 tsp cinnamon (for topping)
  • 1/4 tsp nutmeg (for topping)
  • 1/8 tsp allspice (for topping)
  • 1/8 tsp ground cloves (for topping)
  • 1/4 cup salted butter, melted (for topping)
  • 1/4 cup light brown sugar, packed (for topping)
  • 1 and 1/2 tbsp granulated sugar (for topping)
  • 1/2 cup + 1 tbsp all-purpose flour (for topping)

Instructions

  1. Prep Your Ingredients: Gather all your ingredients, preheat your oven to 350°F (175°C), and line a cookie sheet with parchment paper.
  2. Cream the Butters and Sugars: In a mixing bowl, cream together the softened salted butter, granulated sugar, and brown sugar until light and fluffy (3-4 minutes).
  3. Add the Eggs and Vanilla: Incorporate eggs one at a time, then mix in the vanilla extract.
  4. Mix the Dry Ingredients: In another bowl, combine flour, baking soda, baking powder, salt, cinnamon, nutmeg, allspice, and cloves, then slowly incorporate into wet ingredients.
  5. Apple Prep: Melt butter for apple filling over medium heat, then add apples, apple cider, brown sugar, and spices. Sauté for about 5-7 minutes.
  6. Form the Cookies: Take about 2-3 tablespoons of cookie dough, add a small amount of apple filling in the center, and fold the dough around it.
  7. Bake Away: Place cookies on the baking sheet and bake for 12-15 minutes or until edges are golden brown.
  8. Make Your Salted Caramel: Combine granulated sugar in a saucepan until melted; then carefully add butter and cream.
  9. Drizzle and Devour: After cooling, drizzle salted caramel over cookies and enjoy!
