Savory Texas Kolaches

Delicious and fluffy kolaches filled with smoky sausage, perfect for breakfast gatherings.

  • 5 tablespoons Unsalted Butter
  • 4 cups All-Purpose Flour
  • 1/4 cup Granulated Sugar
  • 2 tablespoons Rapid Rise Yeast
  • 1 teaspoon Salt
  • 1 cup Whole Milk
  • 1 each Egg + Egg Yolk (slightly beaten)
  • 16 links Smoked Sausage

Instructions

  1. Prep your ingredients: Gather all your ingredients on the counter. Measure them out for easier access.
  2. Melt the butter: In a small saucepan over low heat, melt the butter. Once melted, remove it from heat and let it cool slightly.
  3. Combine the dry ingredients: In a large mixing bowl, combine the flour, sugar, yeast, and salt. Mix well.
  4. Warm the milk: In a separate bowl, warm the milk until it’s lukewarm (about 110°F). Stir in the melted butter.
  5. Mix wet ingredients: To the milk mixture, add in the slightly beaten egg and egg yolk. Whisk until combined.
  6. Combine everything: Make a well in the center of the dry ingredients and pour in your wet mixture. Stir until the dough starts to come together.
  7. Knead the dough: Turn the shaggy dough onto a lightly floured surface. Knead for about 5-7 minutes, until smooth and elastic.
  8. Let it rise: Place the dough in a greased bowl, cover it, and let it rise for about an hour, until doubled.
  9. Prepare the sausage: Cook your smoked sausage in a skillet until browned. Slice and set aside.
  10. Shape the kolaches: Punch down the risen dough, divide into 16 pieces, and shape each into a flat circle with sausage in the center.
  11. Seal it up: Fold edges over the sausage and pinch to seal. Place sealed side down on a parchment-lined baking sheet.
  12. Final rise: Let the kolaches rise for another 30 minutes while preheating the oven to 350°F.
  13. Bake them up: Bake for 20-25 minutes until golden brown.
  14. Cool and serve: Let cool on a wire rack and enjoy warm.

Notes

Serve with homemade mustard or freshly scrambled eggs for a delicious breakfast spread.
