  • 1/2 teaspoon salt
  • 1 teaspoon chai spice
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 cup pumpkin puree
  • 2 large eggs
  • 1/2 cup vegetable oil
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Prepare your loaf pan by greasing it or lining the bottom with parchment paper.
  3. Combine the dry ingredients in a large bowl: all-purpose flour, baking soda, salt, and chai spice.
  4. Mix the granulated sugar and brown sugar in a separate bowl.
  5. Add the pumpkin puree, eggs, vegetable oil, and vanilla extract to the sugar mixture and mix until well combined.
  6. Pour the wet ingredients into the dry ingredients and fold gently until just combined.
  7. Bake in the preheated oven for about 55-65 minutes, or until a toothpick inserted in the center comes out clean.
  8. Cool the bread in the pan for 10-15 minutes before transferring to a wire rack to cool completely.
