Crock Pot Creamy Chicken Parm Soup

A comforting and creamy slow-cooked soup blending flavors of classic Chicken Parmesan with the warmth of a hearty stew.

  • 1 pound Boneless, skinless chicken breasts
  • 1 medium Yellow onion, chopped
  • 3 cloves Garlic, minced
  • 28 ounces Crushed tomatoes
  • 4 cups Low-sodium chicken broth
  • 1 tablespoon Italian seasoning
  • 1/4 teaspoon Red pepper flakes, optional
  • 1 cup Heavy cream
  • 1 cup Freshly grated Parmesan cheese
  • 1 teaspoon Salt
  • 1/2 teaspoon Black pepper, freshly ground
  • 2 tablespoons Cornstarch, optional

Instructions

  1. Prep the chicken by placing it at the bottom of your crock pot.
  2. Chop and sauté the onion and garlic, then pour it over the chicken.
  3. Add the crushed tomatoes and chicken broth to the pot.
  4. Season with Italian seasoning, salt, black pepper, and red pepper flakes.
  5. Let the crock pot work its magic, cooking on low for 6-8 hours or high for 3-4 hours.
  6. Shred the chicken about 30 minutes before serving.
  7. Stir in the heavy cream and grated Parmesan cheese.
  8. Thicken with cornstarch slurry if desired, cooking for an additional 15 minutes.

Notes

This soup freezes well, and you can make it vegetarian by substituting chicken with chickpeas or lentils.
