Spicy Yogurt Marinated Chicken with Creamy Dill Feta and Crispy Potatoes

  • 1 cup Greek Yogurt
  • 2 tablespoons Olive Oil
  • 3 cloves Garlic (minced & grated)
  • 2 teaspoons Smoked Paprika
  • 1 teaspoon Chili Flakes
  • 1 teaspoon Ground Cumin
  • 1 teaspoon Black Pepper
  • 1 teaspoon Salt
  • 2 tablespoons Lemon Juice
  • 1 cup Crumbled Feta
  • 1/2 cup Mayonnaise (optional)
  • 2 tablespoons Fresh Dill
  • 1 pound Baby Potatoes
  • 1 teaspoon Garlic Powder
  • 1 teaspoon Dried Oregano or Thyme

Instructions

  1. Marinate the Chicken: In a medium bowl, combine Greek yogurt, olive oil, minced garlic, smoked paprika, chili flakes, cumin, black pepper, salt, and lemon juice. Mix until well blended.
  2. Coat the Chicken: Add your chicken thighs to the bowl and turn them to ensure they’re fully coated in the marinade.
  3. Chill Out: Cover the bowl with plastic wrap and refrigerate for at least 30 minutes, though a few hours or overnight is ideal.
  4. Preheat the Oven: Preheat your oven to 200°C (400°F).
  5. Prepare the Potatoes: Wash and cut the baby potatoes in half (or quarters if larger) and toss with olive oil, garlic powder, dried oregano, salt, and pepper.
  6. Bake the Potatoes: Spread the seasoned potatoes on a baking tray lined with parchment paper and bake for about 25-30 minutes.
  7. Cook the Chicken: In a large oven-safe skillet over medium heat, add olive oil and let it warm. Add the marinated chicken thighs and cook for about 3–4 minutes on each side until beautifully seared.
  8. Finish in the Oven: Transfer the skillet with the chicken into the oven alongside the potatoes and bake for an additional 20–25 minutes until cooked through (temp should reach 75°C or 165°F).
  9. Make the Creamy Dill Sauce: Mix crumbled feta, mayonnaise (if using), fresh dill, and lemon juice until smooth.
  10. Plate It Up: Serve the chicken alongside crispy potatoes, drizzled with creamy dill sauce, and a sprinkle of fresh dill on top.

Notes

For added flavor, consider marinating the chicken overnight and experimenting with seasonal vegetables.
