Strawberry Cream Cheese Icebox Cake

A delightful dessert featuring layers of cream cheese filling, fresh strawberries, and crunchy graham crackers, perfect for any occasion.

  • 2 tablespoons granulated sugar (optional, for macerating)
  • 16 ounces cream cheese, softened
  • 1 cup powdered sugar
  • 2 teaspoons vanilla extract
  • 1 1/2 cups heavy whipping cream or 8 ounces whipped topping
  • 18 full sheets graham crackers
  • Additional sliced strawberries (for garnish, optional)
  • Crushed graham crackers (for garnish, optional)
  • Fresh mint leaves (for garnish, optional)

Instructions

  1. Prepare the Strawberries: Wash and slice your fresh strawberries. Sprinkle on the granulated sugar if needed and let sit for 10-15 minutes to macerate.
  2. Make the Cream Cheese Filling: Beat the softened cream cheese until smooth, then add powdered sugar and vanilla extract, beating until creamy.
  3. Whip the Cream: In a separate bowl, whip the heavy cream until stiff peaks form. Fold it into the cream cheese mixture until just combined.
  4. Layer with Graham Crackers: Place a layer of graham crackers at the bottom of an 8×8 or 9×13 inch baking dish.
  5. Spread the Cream Cheese Mixture: Spoon half of the cream cheese filling over the graham crackers, then layer half of the macerated strawberries on top.
  6. Repeat the Layers: Add another layer of graham crackers, followed by the remaining cream cheese mixture and top with the rest of the strawberries.
  7. Chill: Cover with plastic wrap and refrigerate for at least 240 minutes or overnight.
  8. Serve with Flair: Slice and garnish with crushed graham crackers, extra strawberries, and fresh mint before serving.

Notes
