Summer Berry Poke Cake

A soft and fluffy vanilla cake bursting with fresh berries and topped with whipped cream, perfect for summer gatherings.

  • 1 box of vanilla cake mix
  • 3 large eggs
  • 1 cup of water
  • 1 cup of mixed berries (strawberries, blueberries, raspberries)
  • 1 cup of berry-flavored gelatin
  • 1 cup of whipped cream or Cool Whip
  • Fresh berries for topping

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prepare your baking pan by greasing a 9×13 inch pan.
  3. Mix the vanilla cake mix, eggs, and water in a large bowl until smooth.
  4. Pour the batter into the prepared baking pan.
  5. Bake for 25-30 minutes, or until a toothpick comes out clean.
  6. Make holes in the cooled cake using a fork.
  7. Prepare the berry-flavored gelatin according to package instructions.
  8. Pour the gelatin over the warm cake.
  9. Chill the cake in the refrigerator for at least 2 hours.
  10. Top the chilled cake with whipped cream.
  11. Garnish with fresh berries before serving.

Notes

For variations, consider adding lemon zest or using chocolate cake mix. Store leftovers covered in the fridge for up to 3-4 days.
