Fresh Cherry Muffins with Streusel

Delightful summer muffins bursting with fresh cherries and topped with a crispy streusel, perfect for breakfast or a cozy snack.

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, melted
  • 1 cup milk
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups fresh cherries, pitted and halved
  • 1/2 cup brown sugar
  • 1/4 cup all-purpose flour (for streusel)
  • 1/4 cup rolled oats
  • 1/4 cup unsalted butter, softened
  • 1 teaspoon cinnamon

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Prepare a muffin pan by greasing it or lining it with paper liners.
  3. Mix the flour, granulated sugar, baking powder, and salt in a large bowl.
  4. Combine the melted butter, milk, eggs, and vanilla extract in another bowl.
  5. Blend the wet ingredients into the dry ingredients, folding gently until just combined.
  6. Toss in the pitted cherries gently.
  7. Make the streusel by mixing brown sugar, flour, oats, softened butter, and cinnamon until crumbly.
  8. Fill each muffin cup about 2/3 full with batter and top with streusel.
  9. Bake for 18-22 minutes, checking for doneness with a toothpick.
  10. Cool in the pan for 5 minutes before transferring to a wire rack.

Notes

Best enjoyed warm with butter or honey. Can be made ahead of time and chilled overnight for freshness.
