  • 2 large sweet potatoes, diced
  • 1 red bell pepper, chopped
  • 1 yellow bell pepper, chopped
  • 1 red onion, sliced
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1 teaspoon dried thyme
  • 1 cup feta cheese, crumbled

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Prepare the sweet potatoes, bell peppers, and red onion by washing, peeling, and cutting them into uniform sizes.
  3. Toss the vegetables with olive oil, salt, pepper, and thyme in a mixing bowl.
  4. Spread the vegetable mixture evenly on a lined baking sheet.
  5. Roast for about 25-30 minutes, stirring halfway through.
  6. Add the crumbled feta and return to the oven for an additional 5 minutes.
  7. Taste and adjust seasoning if necessary.
  8. Serve and enjoy!

Notes
