Easy Amaretto Cherries

Indulge in these luxurious, boozy cherries perfect for desserts and cocktails, inspired by the iconic Lazzaroni cherries.

  • 33.5 lbs Cherries (pitted)
  • 1 1/4 C Granulated Sugar
  • 1/2 C Amaretto
  • 1/2 C Water (preferably filtered)
  • 1 Lemon (juiced; zest saved for another purpose)
  • 1 tsp Vanilla Extract
  • 1 tsp Almond Extract

Instructions

  1. Prepare Your Cherries: Wash cherries gently under cool water, pat dry, and pit them using a cherry pitter or a sturdy straw.
  2. Make the Syrup: In a saucepan, combine sugar and water, heat until sugar dissolves completely.
  3. Add the Good Stuff: Stir in amaretto, lemon juice, vanilla, and almond extract. Simmer over low heat for 2-3 minutes.
  4. Combine Cherries and Syrup: Gently fold the pitted cherries into the warm syrup, simmer for another 5-7 minutes.
  5. Cool Down: Remove from heat and let cool completely.
  6. Store It Up: Transfer cherries and syrup into clean, airtight jars, covering cherries completely.
  7. Serve with Joy: Chill in the fridge for a few hours before serving.
