Moist Sour Cream Banana Bread

A comforting, nostalgic banana bread made fluffy and rich with the addition of sour cream.

  • 2 to 3 ripe bananas (mashed)
  • 1/2 cup sour cream
  • 1/2 cup butter (softened)
  • 1 cup sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 1/2 cups all-purpose flour

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Mash the bananas in a large mixing bowl until smooth and creamy.
  3. Cream the butter and sugar with the mashed bananas until fluffy.
  4. Add the eggs one at a time, blending well after each addition, then mix in the vanilla extract.
  5. Incorporate the sour cream into the mixture until combined.
  6. Mix the flour, baking soda, and salt in a separate bowl; gradually add to the banana mixture.
  7. Pour the batter into a greased loaf pan.
  8. Bake for about 60 minutes, checking for doneness with a toothpick.
  9. Cool for 10-15 minutes before transferring to a wire rack.
