Triple Chocolate Mousse Cake

A luscious Triple Chocolate Mousse Cake made with layers of dark, milk, and white chocolate for a decadent dessert experience.

Ingredients

  • 6 oz Dark Chocolate, Chopped
  • 6 oz Milk Chocolate, Chopped
  • 6 oz White Chocolate, Chopped
  • 3 Cups Heavy Cream
  • 3 Tablespoons Sugar
  • 1 Teaspoon Vanilla Extract
  • 3 Large Eggs, Separated
  • 1/4 Cup Water
  • 2 Tablespoons Gelatin

Instructions

  1. Prepare the Gelatin: In a small bowl, combine the gelatin with water and let it sit for 5 minutes.
  2. Melt the Chocolates: In a heatproof bowl over simmering water, melt dark chocolate, then stir in milk and white chocolate.
  3. Whip the Cream: Whip heavy cream with sugar and vanilla until medium peaks form.
  4. Prepare Egg Yolks: Whisk egg yolks, then gradually add melted chocolate to temper them.
  5. Incorporate Gelatin: Warm gelatin and stir into the chocolate mixture.
  6. Fold in the Whipped Cream: Gently combine whipped cream with chocolate mixture.
  7. Whip Egg Whites: Whip egg whites to soft peaks and fold into the mousse mixture.
  8. Layer & Set: Layer mousse in a springform pan, chill for 30 minutes.
  9. Chill: Refrigerate the mousse cake for at least 4 hours.

Notes

For a vegan option, use dairy-free dark chocolate and a coconut cream base.
