The Ultimate Vegan BBQ Chickpea Salad

A vibrant and nutritious Vegan BBQ Chickpea Salad packed with flavors, perfect for any meal.

Ingredients

  • 2 cans chickpeas (drained and rinsed; about 3 cups / 495 g)
  • 1/2 cup BBQ sauce (120 mL)
  • 2 big handfuls Lettuce
  • 1/41/2 cup Corn
  • 1/2 grated carrot
  • a few tbsp Diced red onion
  • a few tbsp Chopped green onion
  • 1/2 cup chopped fresh cilantro (lightly packed)
  • 1/41/2 diced Avocado
  • 5 tbsp tahini (75 g)
  • 3 tbsp lemon juice
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp sea salt
  • Pepper (to taste)
  • 1 tsp dried dill or parsley (or 1 tbsp finely chopped fresh dill or parsley)
  • 36 tbsp water (start with 3 tbsp and adjust)

Instructions

  1. Prep your ingredients by draining and rinsing the chickpeas and chopping your veggies.
  2. Make the dressing by whisking together tahini, lemon juice, garlic powder, onion powder, sea salt, and pepper. Add water until smooth.
  3. Combine the chickpeas and BBQ sauce in a large bowl until nicely coated.
  4. Add the lettuce, corn, carrot, red onion, green onion, and cilantro; mix gently.
  5. Before serving, add the diced avocado and drizzle with tahini dressing.
  6. Plate up and enjoy your delicious salad!

Notes

This salad can be stored in the fridge for 2-3 days. Keep the avocado and dressing separate until ready to serve.
