Cheesy Loaded Meatloaf Casserole

A hearty casserole filled with ground beef, creamy mashed potatoes, bubbling cheese, and crispy bacon, perfect for family gatherings.

  • 1 lb Ground Beef
  • 1 cup Breadcrumbs
  • 1 large Egg
  • 1/2 cup Milk
  • 1 medium Onion, finely chopped
  • 1 tsp Garlic Powder
  • 1 tsp Salt
  • 1 tsp Black Pepper
  • 1 tbsp Worcestershire Sauce
  • 1/2 cup Ketchup
  • 3 cups Mashed Potatoes
  • 1 cup Cheddar Cheese
  • 1/2 cup Bacon, crispy and crumbled
  • 2 tbsp Green Onions or Chives

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prepare all your ingredients.
  3. Cook the ground beef in a large skillet over medium heat until browned, about 5-7 minutes.
  4. Add the chopped onion and cook until soft and translucent, around 3-5 minutes.
  5. Mix together the cooked beef and onions with breadcrumbs, egg, milk, garlic powder, Worcestershire sauce, ketchup, salt, and pepper in a large bowl.
  6. Transfer the mixture to a greased 9×13-inch casserole dish.
  7. Top with mashed potatoes, spreading them evenly.
  8. Add shredded cheddar cheese and crumbled bacon on top.
  9. Bake for 25-30 minutes until heated through and cheese is bubbling.
  10. Garnish with chopped green onions or chives before serving.

Notes

Feel free to customize with different types of cheese or meats. This casserole can be made ahead of time and frozen.
