Butternut Squash Bread

  • 1/2 cup maple syrup
  • 2 cups all-purpose flour
  • 1/2 cup sugar (or a sugar alternative)
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 2 large eggs
  • 1/2 cup vegetable oil
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prepare your baking pan by greasing it or lining it with parchment paper.
  3. Mix the wet ingredients: combine mashed butternut squash, maple syrup, sugar, eggs, vegetable oil, and vanilla extract until smooth.
  4. Combine the dry ingredients in a separate bowl: flour, baking soda, baking powder, cinnamon, and salt.
  5. Add the dry ingredients to the wet mixture, stirring gently until just combined.
  6. Pour the batter into the prepared loaf pan, smoothing the top.
  7. Bake for 55-65 minutes, or until a toothpick comes out clean.
  8. Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
