Creamy and decadent Baileys Cheesecake Balls coated in chocolate, perfect for any occasion.

Ingredients

  • 2 dozen chocolate-covered butter cookies
  • 8 ounces mascarpone cheese
  • 1/2 cup Baileys Irish Cream
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • Chocolate coating (for dipping)

Instructions

  1. Crush the cookies in a food processor until fine crumbs form. Set aside.
  2. Mix the mascarpone cheese, Baileys Irish Cream, powdered sugar, and vanilla extract in a bowl until smooth.
  3. Incorporate the crushed cookie mixture into the creamy filling.
  4. Chill the mixture in the refrigerator for about 30 minutes.
  5. Shape into balls, about 1 to 1.5 inches in diameter.
  6. Chill again for another 20-30 minutes.
  7. Melt the chocolate coating in the microwave or double boiler.
  8. Dip each ball in the melted chocolate and let excess drip off.
  9. Let the chocolate set in the fridge for 15-20 minutes.
  10. Serve and enjoy with coffee or milk.

Notes

These cheesecake balls can be made ahead of time and stored in an airtight container in the fridge for up to a week.
