Ingredients

Scale
  • 2 blocks (16 oz) cream cheese, softened
  • 10 graham crackers, crushed
  • 4 tablespoons unsalted butter, melted
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • Chocolate for decoration (preferably white chocolate)

Instructions

  2. Make the crust: In a medium bowl, combine crushed graham crackers and melted butter until well combined. Press mixture into the bottom of a greased 9×9 inch baking dish.
  3. Mix the cheesecake filling: In a large bowl, beat cream cheese until smooth. Add sugar and vanilla, mixing well. Incorporate eggs one at a time, mixing until just combined.
  4. Pour the cheesecake filling over the crust, smoothing the top.
  5. Bake for 30-35 minutes until edges are set but center is slightly jiggly.
  6. Cool completely at room temperature, then refrigerate for at least 2 hours or overnight.
  7. Decorate with melted white chocolate to create ghost faces.

Notes

For a dairy-free option, substitute cream cheese and butter. Let cheesecake cool completely before decorating for best results. Serve chilled for a delightful treat.
