  • 1 cup sugar
  • 2 tablespoons cornstarch
  • 1 tablespoon lemon juice
  • 1 teaspoon almond extract
  • 1 tablespoon butter, cut into small pieces
  • 1 pie crust (store-bought or homemade)
  • 1 cup all-purpose flour
  • 1/2 cup brown sugar
  • 1/2 cup rolled oats
  • 1/2 cup cold butter, cut into pieces (for the crumb topping)
  • Vanilla ice cream (for serving)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Roll out your pie crust to fit a 9-inch pie dish.
  3. Transfer the crust into your pie dish, pressing it into the corners.
  4. Poke the base with a fork to prevent bubbling.
  5. Pre-bake the crust for about 8-10 minutes and let it cool slightly.
  6. Combine the pitted tart cherries, sugar, cornstarch, lemon juice, and almond extract in a medium bowl.
  7. Let the mixture rest for 10 minutes.
  8. Pour the cherry filling into the pre-baked pie crust.
  9. Dot the filling with small pieces of butter.
  10. Mix all-purpose flour, brown sugar, and rolled oats in a separate bowl.
  11. Add the cold butter, stirring until the mixture becomes crumbly.
  12. Sprinkle the crumb mixture evenly over the cherry filling.
  13. Bake the pie for 30-35 minutes or until golden and bubbling.
  14. Let the pie cool for at least 30 minutes before slicing.
  15. Serve warm with a scoop of vanilla ice cream.

For a gluten-free option, swap regular flour for a gluten-free blend, and use gluten-free oats.
